    I do a LOT of stairwalking and track it on my watch as "elliptical".
    That seems to work perfectly.
    In answer to your second question, I believe that it takes 3 attempts before automatic recognition and the exercise must be for 5 minutes. Don't quote me on that though.

    I've got into the habit of explicitly telling it I'm walking, that way I get proper tracking, of time, distance and HR

    A variation...  I use the stairclimber daily at 900-1100 floors.  My Apple Watch and Fitness apps record the activity and calories reasonably well.  Health Mate records the activity as climbing.  A bit of annoyance is that Health Mate keeps telling me I’m not making my step goal.  It just doesn’t count steps from the stair climber which alone far exceed my daily step goal.
